One of the things I am most excited to share on my blog is my favorite recipes. A fun fact about me is that I LOVE to cook. I was a student teacher for my high school’s cooking classes, I have taught cooking classes at my local arts academy and even been on our local television showcasing how to bake brownies from scratch!
When I was trying to decide the first recipe to share on my blog, I decided to share my favorite go to cookie recipe. This recipe was taught to me by my grandma. I had asked her to put together a hostess packet for me on how to be a great host when I was first married. She shared that nothing says welcome to my home like cookies. But let’s be realistic whipping cookies together isn’t always the easiest thing UNLESS you have this recipe.
This recipe takes less than 20 minutes and makes the house smell like yummy peanut butter goodness. It’s a 3 ingredient recipe that I highly suggest memorizing. If ever you have last minute guests you need to impress, you will thank me!
The three ingredients are:
1 cup peanut butter
1 cup sugar
1 large egg
Mix all three ingredients together. Shape the dough into 1 inch balls. Then place the balls 1 inch apart on an ungreased baking sheet. I would suggest gently flattening them by either lightly tapping the baking sheet on the counter or using a fork to place little grates at the top of each one.
Now here is the only tricky part, bake them at 325° for 15 minutes, but set a timer at 10 minutes and start checking on them every minute. As soon as they turn lightly golden brown pull them out! These cookies very easily over cook, it is better to under cook and put back into the oven, then to start over again. After you pull the cookies out of the oven, put them in the freezer to set. You only need to do this for 3 minutes and then they are ready to serve!
